Postcard showing a Hawaiian man pounding poi.
In Charles C. Myers’s own words, “A native Poi pounder. Poi is the principal food of the native Hawaiian and it is made from the root of a plant by the name of Taro. The root of the plant is baked and then pounded up into meal, moistened and left to ferment over night after which it is ready to use. To most anyone this food is no more palatable than a paste made of flour anf [sic] water, however it is vary [sic] nourishing food and preferred by the native to the fruit that grows in abundance.”
